Both lamb and game meats share an iron-rich palate with common fatty acids that are very different from beef, pork or chicken. To balance these, we get away from the typical paprika based recipes and also avoid being just a herb and salt rub. We sought to make the most of the smoking or grilling processes to accentuate the flavour of these meats, using a base of pasilla (a dark capsicum with slight heat), with native salts, a touch of brown sugar, thyme. There's also juniper, a unique flavour from our German-American heritage and Australian bush herbs that provide flavour from the land where the animals grazed
Works on lamb, venison, kangaroo, and actually does a nice job on beef too.
