Smashing Smashed Burger Recipe
This Father’s Day, go big. Crispy edges. Melty cheese. Bacon. Beer cheese sauce. The burger Dad deserves.
Cook Time - These are quick!
Ingredients (makes 4 burgers)

500g beef mince (80/20 meat-to-fat ratio is ideal)

4 burger buns (brioche or potato rolls work best)

4 slices American cheese (or cheddar if you prefer)

1 large brown onion, thinly sliced

4 Tbsp butter, softened

2 Tbsp vegetable oil (or beef tallow for extra flavour)

Salt & freshly ground black pepper

Pickles, sliced

Lettuce (optional)Instructions
- Special Sauce (mix 3 Tbsp mayo + 1 Tbsp ketchup + 1 tsp mustard + 1 tsp pickle juice + pinch of smoked paprika)
Instructions
Prep the Patties
- Divide the beef mince into 8 equal balls (about 60g each). Don’t overwork them — just roll lightly.
- Keep them chilled until cooking.
Toast the Buns
- Butter the inside of each bun and toast on a hot skillet or grill until golden. Set aside.
Cook the Onions
- In the same pan, add oil and sauté onions over medium heat until caramelised (8–10 mins). Keep warm.
Smash Time
- Heat a cast-iron skillet or flat plate BBQ until smoking hot.
- Place 2 beef balls on the pan.
- Immediately smash them down with a heavy spatula or burger press until very thin (about 1 cm).
- Season generously with salt & pepper.
Flip & Cheese
- After 2 minutes, once the edges are crispy and browned, flip the patties.
- Top one patty with cheese, then stack the second patty on top. Let the cheese melt.
Assemble
- Spread special sauce on the toasted bun.
- Layer with pickles, smash burger patties, caramelised onions, and lettuce if using.
- Crown with the top bun.
Serve
- Hand it to Dad with fries or onion rings — and watch him fall in love with every bite.
Beer Cheese Sauce (optional but epic)
- 1 Tbsp butter
- 1 Tbsp plain flour
- ½ cup lager or pale ale
- ½ cup milk
- 1 cup grated cheddar cheese
- Pinch of cayenne pepper or smoked paprika
Method: Melt butter, whisk in flour, cook for 1 min. Slowly whisk in beer + milk. Stir until thick, then melt in cheese and spices. Keep warm.
